Better blue cheese than green cheese. I remember, when I was a kid my grandparents and parents would cut the fungus off of the block of cheese and we'd still eat the non-fungal parts.

Yep, and we were Appalachian-level poor. We ate most days, but not EVERY day. Never had enough to eat, though, even when we did have food, and never spent a day on the government dole outside of taking the cheese and the canned chicken. Ate a lot of saltines & mayo or saltines and sorghum.

Ate a lot of saltines & mayo or saltines and sorghum. I loved it when we were lucky enough to get some of that government cheese. Mom would make a big pot of pinto beans and a pan of cornbread. Then we would slice off some of that cheese, put it in the bottom of a bowl and pour those hot pintos on top and let that cheese melt into the beans. That with cornbread was hard to beat.
