Hello Thomas, Lydia and my old friends from MLB Astros Forum. As requested, here is the first recipe. Anyone wanting to post a recipe you have liked or sounds good is welcome. Comments are welcome, even negative as long as they are not hateful.
AVOCADO TACOS 1 pound 80% or better HB Meat Avocados as many as your family can eat Mexican Blend, Monterrey Jack or Cheddar Cheese shredded or freshly graded small 1 Package Taco Seasoning Lettuce, Onion, Tomatoes Jalapeños (optional)
Fry HB Meat until no pink. Remove HB Meat from skillet onto paper towels. Drain grease from skillet and wipe dry with paper towel. Add HB Meat back to skillet and follow directions on Taco packet. While taco meat is cooking on medium low. Walsh Avocados, dry and cut in half, then scoop out 1/2 to 1/3 of 🥑 to put meat in. Take scooped avocado and make Guacamole to eat with chips. Chop Tomatoes small as well as onion and lettuce in small strips. Add meat and cheese to avocado cavity. Then add Veggies and any sauce you like. Or, you can make a salad on the side. Don’t forget your guacamole and chips. Add Jalapeños any where you like or delete them all together. I like them chopped rather than whole. GREAT with Red Wine, Beer or Sweet Tea NOTE: Make kids soft or hard shell Tacos if they do not like Avocados. Even picky adults. ENJOY!

Hello again. Hope everyone had a great and safe Thanksgiving. Ours was uneventful but with lots of great food. Wish how I could figure out how to post pictures from my photos on here. Thought I would post a recipe for egg salad in case anyone had boiled eggs left at Thanksgiving dinner like I did.
EGG SALAD Serves 8 or slightly more
2 Tablespoons butter, room temperature 4 oz cream cheese, room temperature (half a package) 2 Tablespoons celery, minced 1 Tablespoon Mayo (or more if desired) 1 teaspoon onion, grated 1 teaspoon sugar 1/2 teaspoon lemon juice 1/4 teaspoon salt 1/8 teaspoon pepper 6 hard boiled eggs, finely chopped or squished with a fork. Croissants or Bread Paprika (optional) Dill Pickle Relish (optional) Bacon (optional)
In a medium bowl, cream together butter and cream cheese until smooth. Stir in celery, mayo, onion, sugar, lemon juice, salt and pepper until well blended. Add eggs and mix well. Cover and chill for 1 hour or longer. Serve on bread or croissants.....this is so good on Sourdough bread or buns.
This can easily be cut in half so it serves 4 people instead of 8 as original recipe that serves 8 or slightly more.

Be sure and keep avocados, tomatoes and most soft fruits away from apples and bananas. They make them ripen too fast. The brown paper bag is the best way I know of.

I got your brainwaves about Midland and just had to come on to see you. Midland is growing so fast they can’t keep enough housing. Farmers and ranchers are running water lines out to the highway side of their property and dropping down power lines. Then added gravel as driveways. Some are even buying used RV’s and house trailers or people can park their own trailers. The rent is high, but it is a place to cook, shower and sleep. People are even renting out their pool houses or letting several tents in a backyard with everyone using the pool house falsities and they cook on the girl. The traffic is horrible and the streets are in bad shape. When are there time for road repair? People are driving the 200 miles from Brownwood to Midland and working 10 days and then coming home for 7 days. Families are getting rich. Some though are getting too careless with their money living the good life. Hate to see young families getting neck high in debt. SO HAPPY we no longer live out there. Happy as can be living in the middle of nowhere on our little old ranch. West Texas is going crazy. Midland the most of all because it is the headquarters of the oil companies. Odessa are the welders, pipe fitters and most the labor. Of course Midkand has tool pushers too to take care of the wells east and south of town. Just not as many roughnecks.

HI MARSHALL. Do you still have my email address or are we still FB friends? I have been through hell. Lost the ability to walk and spent 13 months in a Nursing home. Lost 145 pounds and now weigh 138 lbs. not bad for 5’6.5” tall old lady. More to tell you, but not on here. Can I set up a locked room? Don’t mind old buddies knowing what happened to me, but not Folks I do not know. Later my old friend.

Lydia, I know how to reply but I have forgotten how to post. I have a very common recipe but thought some of the newbies and new cooks might not know it. Anyway my medication plus current UTI cause confusion. So if you could remind me what I punch to get a post screen. Have missed being here, but just keep forgetting what to do or how to find it. I am embarrassed to have to ask. Guess that is what happens when you are 75 yrs. old and take twenty four pills a day. Thanks in advance. hahaha, did I just post instead of replying? Really confused. One of my doctors calls it walking into a fog.
