I shudder to think of those yankee enchildas and canned refried beans. It's not easy to find decent Mexican carryout up North but it can be done. Nothing worse than canned refried beans. And a lot of the restaurants use them. But there are a few Mom and Pop restaurants that start with dried pintos or a mix of pintos and a small amount of black beans. And yeah, many of the restaurants here use a Chile Colorado sauce that has tomato sauce in it. Blech! But you can get a fairly authentic Chile Rojo, at a few places. The best Mexican food up North (which is often at places that don't look fancy at all) would probably be considered average in Texas.

Most Mexican food in Texas is Tex-Mex anyways. Cheese and flour tortillas with everything.

In my area they are all over the place legal and illegal food trucks selling their goods.
