You have players on 29 teams to choose from. (or in my case, 28 since I'll also eliminate any Tigers bias in my selection)
I can think of several, but foremost for me is Salvador Perez.

My favorite non-Astro is Brandon Belt.

For me, it’s a toss-up between Trout and Lindor for favorite non-Astro.

Goldschmidt. He's a Texan, a top tier player, and I think his best is yet to come. Still sad we didn't try to land him here.

My favorite non Astro was Mo Vaughn when he played in Pawtucket. Very fan friendly and would hold court after the game in the bar in now PNC Field in Moosic. He must have hit the most majestic homers in that park until the arrival Aaron Judge.

I tried to think of one, did the whole "which player would I care enough about that I'd prioritize driving to Houston to see them?" and couldn't think of anyone. I used to be a fan of Pujols and loved to watch him play (even though he murdered Houston), but none of the current crop do it for me.
I am impressed by a lot of players, like Trout and Baez.

The past player I would have loved to visit with would have been Ty Cobb.

I'm sorry. If they're not Astros, I'm not really interested in them unless they might become Astros. Most of those in trade rumors are totally unknown to me and I must research them to even care whether they could help us or not.
I suppose the only name I can think of that isn't in that category is Kevin Millar who I remember fondly because he was a Lamar Cardinal before his MLB career began. I'm pretty sure he retired.

Before he retired, Beltre was my favorite non-Astro, too. Now, it'a Brandon Belt, the old East Texas boy.

OK. I just thought of a player who has no Astros or local connection that I admired. Roberto Clemente.
